Worth growing for both their statuesque appearance as well as their flowerheads, which if picked and cooked before the flowers emerge, are delicious when drizzled with butter. Impressive and decorative perennials, they look wonderful in the border, adding height and structure. If grown purely as a vegetable, they should be replaced (or take basal cuttings) every three years to stop them getting too woody. - Garden Care: Plant the bare root offsets in a sunny, sheltered position at 90cm intervals. Keep them well watered initially and remove any flowerheads that appear in the first year. Cut back in autumn and apply a generous layer of mulch in spring.
