A much under-rated vegetable which has edible tubers that have a potato-like texture and are delicious. Originally from North America, Jerusalem artichoke is a member of the daisy family and is closely related to the sunflower.

The plants make an excellent screen or windbreak and the tubers are ready to harvest from between October and early spring.


  • Garden care:
    Plant tubers 10–15?cm (4-6in) deep in well-drained, fertile soil enriched with organic matter, spacing them 30-40?cm (12-16in) apart in full sun. When shoots reach about 30cm (12in), earth up around the base to support growth.

    Keep soil consistently moist, watering during dry spells, and remove any flower buds in summer to encourage tuber development. Feed occasionally with liquid fertiliser. Tubers are usually ready to harvest after the first frost, when stems yellow and die back. Plants can reach 1.5-2m (5-6.5ft) tall, so support stems if needed.
